It’s getting a little minty…

Heavenly Chocolate Mint Slices

— Prep time: 20 minutes. Cook time: 20 minutes (3 hours of chilling required). Serves: a party of people (approx 12 slices).

Ingredients:

The Base =

  • 250g butter, at room temperature
  • 1/2 cup brown sugar
  • 1/4 cup caster sugar
  • 1 egg
  • 1 cup plain flour
  • 1/3 cup dark cocoa
  • 1/2 cup desiccated coconut or nuts (optional)

The Minty Center =

  • 3 1/2 cups icing sugar
  • 50g butter, at room temperature
  • 1/3 cup heavy cream
  • 2 tsp mint essence
  • 1 tsp green food colouring

Chocolate Coating On Top =

  • 180g dark chocolate (50% cocoa at least)
  • 1/3 cup heavy cream
  • 1 cup icing sugar

Method:

Preheat the oven to 190 degrees Celsius. Prep a slice tin and set aside.

Beginning with the base, cream the butter with an electric mixer. Add the sugars together and combine with the electric mixer until incorporated together. Beat in the egg and ensure all is combined well. The mixture should be sticky and dough like. Spread the mixture into a tin evenly using a moistened spatula to do so. Bake in the oven for 15 to 20 minutes. Once baked, remove from the oven and cool in the tin.

Next up is the mint cream for the filling. Beat the icing sugar and butter with an electric mixer until the mixture becomes light and fluffy. The mixture should becomes lighter in colour. Add the mint essence along with the green food colouring and beat to combine. Spread the mint icing mixture over the cooled base evenly, smoothing it out with a knife. Cover with glad wrap and allow it to chill for 2 hours.

Lastly, the chocolate coating. Heat up water in a small pot. Break apart the dark chocolate into pieces. Place a larger pot on top of the small pot. Add the dark chocolate to the large pot and stir with a spoon constantly. Add the heavy cream and keep stirring until the mixture has combined together. Add the icing sugar and stir together. The mixture should become thicker in consistency. Pour over the cooled mint filling evenly, spread out with a spoon if need be. Cover with glad wrap and allow it to chill for 1 hour.

Remove from the fridge and cut into desired sizes using a sharp knife. Enjoy the minty freshness of the chocolate mint slices. Remember to store in an airtight container in the fridge. These slices can survive for up to 3 months however, that’s unlikely isn’t it 😉
